Who doesn’t love a good vanilla cupcake? Here is my go to recipe. I tend to double, or triple the batter if I’m making them for an event. If you’re not a vanilla person, have not fear! I have a rich chocolate cupcake recipe if those are the ones you prefer. I topped these with a lemon cream cheese frosting that was very sweet. This makes about 12 cupcakes comfortably.
Recipe

Pre-heat your oven to 350°F/180°C.
Place Softened Butter into a mixing bowl with White Sugar and Vanilla. Cream together with hand mixer, in stand mixer, or with a whisk. Whisk until light and fluffy.
Add Eggs into mixture one by one. Beating until they're well incorporated.
Sieve the flour, baking powder, and salt together and add to the creamed butter and sugar.
Add milk, and sour cream to the mixture and mix until there is no more clumps.
Use an ice cream scoop, and portion out your batter into the cupcake liners about 2/3 full.
Cool cupcakes on wire rack completely before icing
