My spin on one of my favourite childhood snacks. These keto pigs in a blanket (thong?) will quickly become a staple in your house. Enjoy these low carb keto pigs in a blanket with your favourite condiments.
Pre-Heat oven to 350°F/205°C. Line baking sheet with parchment paper. (Don't use Wax Paper! If you don't have parchment use foil.)
Boil Hotdogs according to package instructions. Place in colander and drain. (They need to be dry before wrapping them with dough).
Shread Mozzarella Cheese. Add Mozzarella cheese and Cream Cheese to a saucepan (or microwave for 1 minute). Melt on low heat, stirring occasionally.
Add Almond Flour and Egg to the mixture and stir until just combined.
Place dough between 2 sheets of parchment paper and roll out until desired thickness is reached.
Cut Hotdogs into 2.
Slice dough into strips. Wrap hot dogs with sliced dough.
Place wrapped hotdogs onto a baking sheet.
Bake for 17-20 minutes.
Serve warm with your favourite condiments.
