What the heck is a keto egg roll in a bowl you ask? Deliciousness that’s what. Think off a spring roll. Take the inside out, add meat and you’ve got an egg roll in a bowl. This recipe actually contains no eggs so it’s still quite baffling where it gets it’s name from… If you know the origin help a sister out and fill me in!
One thing I’ll say about this keto egg roll in a bowl recipe is that it’s super easy to make. I mean super simple. You only need a few ingredients and you can make it all in one pot, in about 15 minutes. If that’s not a dream meal prep situation I don’t know what is.

Tips for a Successful Keto Egg Roll in a Bowl
If you plan on cooking a large batch and using it for meal preps I would suggest only just incorporating the veggies before taking your pot off the stove. You don’t want to cook the vegetables down so much that they lose their freshness and crisp. When you reheat your meal later on in the week the veggies will cook a little bit more and they’ll be the perfect texture. If you’re like me who prefers crunchy things over everything I’d highly recommend that you slice and dice your own cabbage and carrots. I find that when I make this recipe with my own sliced veggies I’m more in control of the texture and bite. The only issue with this is that it adds on a little bit more time (5 ish minutes) to your prep, so be prepared for that.
If you’re looking for a quick and easy meal prep and aren’t too concerned with chowing down on large crunchy pieces of cabbage, just buy a pre-packaged bag of coleslaw from the grocery store and have at it!
Recipe
Heat Olive oil in pan on high heat for about 2 minutes.
Sautee Ginger and Garlic for about 2 minutes on medium heat.
Add ground beef to pan and start to brown on high heat.
Add Sea Salt, Black Pepper, All Purpose Seasoning, Cayenne Pepper, Onion Powder, and Garlic Powder to ground beef. Stirring rapidly.
Reduce heat to medium low. Add Sliced Onions, Sliced Carrots, and Sliced Cabbage to Ground Beef.
Add Sesame Oil and Soy Sauce to pan.
Mix for 1 minute depending on desired crispiness of vegetables.
Serve.
