Cauliflower Fried Rice has changed the game for me. I love fried rice, in fact, I love all “Asian-inspired” food. This dish is low carb, vegetarian, quick, easy and delicious. This recipe ticks a lot of boxes for me. Cauliflower Fried Rice is flavourful, packed with vegetables, and is a great substitute for real rice. I feel like I’m eating normal people food when I eat this, I swear! Once I learned how to make Cauliflower Fried Rice, it quickly joined my line up as a quick and tasty keto meal. Even if you’re not keto, you can enjoy this dish as it is nutrient dense and low in calories. Substitutions For Cauliflower Fried Rice
As with the majority of my Asian-Inspired recipes, you can be flexible when It comes to seasoning. If you’re vegan, vegetarian or just don’t like eggs, then you don’t have to add them. Add or omit certain seasonings and aromatics, that’s this beauty of this dish. Choose to add meat to your caulirice. I can see this tasting fantastic cooked with some bacon. To take to the next level, try replacing the olive oil with bacon grease for all my bacon loving keto friends😋. I hope Cauliflower Fried Rice becomes a staple in your diet like it has in mine.
Recipe
Scramble Eggs with butter in a separate frying pan, and set aside. The eggs should be slightly undercooked.
In a clean frying pan or wok heat Olive Oil with Onions, Ginger and Garlic until fragrant on Medium High. (Around 1-2 minutes).
Add Riced Cauliflower to the pan and stir occasionally. Cook on Medium heat for 3-5 minutes until you achieve your desired texture.
Season with Black Pepper, Cayenne Pepper, All Purpose Seasoning, and Sea Salt.
Add Diced Bell Pepper and any other additional vegetables which you enjoy. Cook for 1 minute.
On Medium-High Heat, Add Sesame Oil and Soy Sauce (or Coconut Aminos). Stir for 45 seconds.
Add scrambled eggs.
Enjoy with your choice of side.
