The first keto meal I ever ate was a Fathead Pizza. I was so much less mature, had used ground almonds (with the husk on it), and definitely overloaded on the toppings. Still, fathead pizza will always hold a special place in my heart. It looked like this!
This time around, after a year and a half of living a keto lifestyle I decided to attempt it again. It turned out miles better than my initial attempt and I thought I’d share it with you. This Keto Fathead dough recipe is from one the most creative keto-ers, Emily, or more popularly known on Instagram as @Keto.Copy. I am here to report that this recipe is fantastic!

What is Fathead Dough?
Fathead dough is a keto friendly low carb dough traditionally made with Mozzarella Cheese, Cream Cheese, Egg, and Almond Flour. This all purpose dough can be modified to produce different textures and is a good for a number of recipes. I use a fathead dough to make my Keto Pigs in a Blanket which is a great appetizer and is always gobbled up by the fam.
I’ve been fasting and eating OMAD recently and I haven’t been meeting my macros or getting enough food in because I’m not hungry. I decided to make Fathead Pizza specifically because it super high calorie. No matter how you cut it, a fathead pizza is pretty fatty even for a keto way of living. I’m always sure to pace myself and not gobble up the entire pie and use less fatty protein sources. Truly this is pretty easy to do because this pie is SO filling. I had 2 slices and had to tap out. Yay leftovers!
Toppings
I’m a simple gal. I had chicken, pepperoni and green peppers on my pizza. I used my Instant Pot (which I just got for myself for Christmas 😈) to make some Jerk Chicken the night before and it came in handy when I was making my pizza. Since I’m not a huge fan of pork, I used turkey pepperoni which is leaner than regular pepperoni. The key to making a successful pizza is to load the toppings in accordance to the thickness of your dough. If you’re a thin crust type of person make it a point to just use a light hand when distributing your toppings. If you like a thicker crust feel free to go crazy.

Recipe
Preheat oven to 325°F/163°C.
Melt Shredded Mozzarella Cheese in a Microwavable Bowl for 30 seconds in the microwave. Do this 3 times for a total of 90 seconds. Stir after each 30 second interval.
Add Egg to cheese and incorporate fully with spatula.
Combine Almond Flour and Baking Powder in a separate bowl and whisk together.
Add dry ingredients: Almond Flour and Baking Powder Mix to Cheese and Egg and combine.
After incorporating fully use your hands to knead dough for about 3 minutes. Dough should be slightly firm.
Place dough ball between two sheets of parchment paper and roll out with rolling pin until your desired thickness. (Making it too thin will make it harder for the crust to hold your ingredients).
Place dough on parchment paper onto pizza pan and form a crust.
Bake for 12-15 minutes until crust is cooked but not browned. Remove from the oven.
Add your toppings: Start with Tomato Sauce and Mozzarella Cheese before adding the remaining ingredients: Chicken, Turkey Pepperoni, and Green Pepper to crust.
Broil on low for 3 minutes (watching carefully so your crust doesn't burn)
Slice and Serve.
