It was a close friend of mines birthday and knowing that she’s a chocolate lover, I decided to make Triple Chocolate Chip Cookies for her. It’s very hard for me as someone who lives a generally low carb lifestyle to make things like this and not cheat. I always have to try the cookies I make, this is something I’m working on it, but more on that later.
Seriously though, I couldn’t eat more than two of these cookies without reaching for water immediately. Think Popeyes Biscuit T H I C C. Though these cookies are decadent what they are not is overly sweet. Depending on your preferences you can tweak the recipe to make the perfect cookie for you.
Types of Chocolate to Use
I used three types of chocolate for these Triple Chocolate Chip Cookies. Semi-Sweet chocolate chips, Milk chocolate chips and, Mini White Chocolate chips. I got all these ingredients from Bulk Barn. (I honestly don’t know why they don’t have a rewards program because I would be the first to sign up.)
Depending on how you like your Triple Chocolate Chip Cookies will determine what quantities of which chocolate you should add.
For a sweeter cookie, add more milk chocolate chips. For a richer chocolate flavoured cookie, add more semi-sweet chocolate chips. If you’re a lover of white chocolate chips, go to town!
I added semi-sweet chocolate chips and milk chocolate chips to the batter. Then I dotted the tops of the cookies once they were laid out on the baking tray with mini white chocolate chips. You can choose to do this with any kind of chocolate chips you like. When you do this they melt while they bake and tend to look more aesthetically pleasing when they come out.

Pre-Heat oven to 350 Degrees Fahrenheit.
Cream Softened Butter and Sugar together. Do so until light and fluffy.
Add Eggs (one at a time), and Vanilla Extract to butter and sugar mixture. Stirring until just combined.
Sift together Flour, Cocoa Powder, Salt and Baking soda in a separate bowl.
Add sifted dry ingredients, into creamed butter mixture gradually. Do so bit by bit, stirring until just combined. (Be careful not to over mix)
Add Milk Chocolate Chips, Semi-Sweet Chocolate Chips to the mixture, gently blending them in.
Place cookie dough on the prepared baking sheet with a cookie scoop, or a heaping tablespoon.
Top cookies with Mini White Chocolate Chips. (You can also use milk chocolate chips for a sweeter cookie, or semi-sweet chocolate chips for a richer chocolate taste).
Bake on the bottom rack for 12 minutes until cookies are barely done but still soft and chewy.
Let cookies rest for 20 minutes before consumption. (Seriously, this step is key)
